easy + delicious lo mein

I’m serious when I say that this dish as easy as it gets but packs a flavour punch! It’s one of those meals you can feel good eating knowing how simple it is to make without sacrificing the taste! Enjoy! XO


Lo mein

Easy to make + deeply satisfying. Make this for lunch or dinner & it won’t disappoint!

Serves: 4-6 people.

Ingredients:

For lo mein sauce:

  • 1/2 cup tamari/soy sauce (I use this brand)

  • 1/2 cup maple syrup

  • 1” ginger, peeled &. minced

  • 2-3 garlic cloves, minced

  • 1-2 tbsp seasoned rice vinegar

  • 2-3 tbsp toasted sesame oil

For remainder of dish:

  • 1/2 onion, diced

  • 2-3 cups chopped veggies of choice (My recommendations: carrots, celery, purple cabbage, bok choy, bell pepper, mushrooms, kale, or the like)

  • 6-8 brown rice ramen noodle patties (I use this brand—for accurate measurements)

  • sesame seeds, to top

  • sriracha (optional, I LOVE this brand on top of finished dish)

directions:

  1. Prepare the sauce by whisking ingredients together. Set by stove so it’s ready when you need it.

  2. In a large pot, add water & bring to a boil (for your ramen).

  3. Cut onion & add to large frying pan, then let sit for 10 minutes. Prep other veggies & set aside in a bowl.

  4. Over medium-high heat, add a splash of water to frying pan, then water sauté onion for a couple minutes.

  5. Add bowl of veggies to frying pan, along with lo mein sauce. Turn heat down and simmer until veggies are cooked to your liking.

  6. When veggies are almost cooked, add your ramen to boiling water for 2-3 mins, then strain and run under cold water.

  7. Return ramen noodles to pot & pour in lo mein/veggie minute, Combine together.

  8. Grab a bowl and scoop out noodles + veggies (and a little extra liquid to your dish!). Sprinkle with sesame seeds & sriracha, if you fancy!

  9. ENJOY!!
